Prior art
To prepare a coffee by extracting the aromas contained in a dose of roasted coffee grind, it is known to pass hot pressurized water through the ground roast coffee, and collect the coffee extract with its aromas thus obtained. Many solutions have been proposed to effect the passage of water in ground coffee. The technologies diverge according to the desired goals and each have advantages and disadvantages. The domestic preparation of a coffee extract was initially not subject to the same constraints as professional preparation. These requirements have evolved and the so-called domestic machines tend to come closer to professional machines to produce a coffee flavored concentrate and having a large persistent foam cover on the top of the cup of coffee.

Although the description relates primarily to coffee, it is obvious that the invention can be applied to other uses such as the preparation of teas or herbal teas, chocolate drinks or the like or various flavored drinks. . To simplify the description we will speak mainly of cartridge, knowing that the basic container is adapted to the selected content and can be in all kinds of shapes, geometries and can be made with various materials compatible with the use.
[0006] The process is as follows: The user of an automatic machine manually takes out a capsule from the package and introduces it into a slot of the machine, so that it falls by gravity into a predetermined position. When closing the machine, the bottom of the capsule is automatically pierced with one or more knives that tear the membrane of the capsule. A pump sends constant pressure and flow, water in a sealed capsule chamber. The outside of the capsule is bathed in the flow of pressurized water that enters the chamber of the capsule-holder through the tears made in the bottom of the capsule. The water surrounding the capsule is found inside the capsule and wets the coffee until the pressure rises enough in the capsule to tear the membrane opposite the bottom. It is the ground coffee, its compression and its position in the capsule which determines the extraction pressure of the aromas. The water is loaded with coffee extract with its aromas, comes out of the capsule passing through the openings of the membrane and flows into a cup. The extraction is fast since it takes only 5 to 40 seconds depending on the desired dilution.
In this process for the preparation of a coffee extract, the passage of water takes place substantially vertically, the entry of water into the capsule being effected by the bottom and the outlet of the coffee extract. being performed by the closure film located below the bottom, since the capsule occupies an inverted position in the machine. It has been found that, contrary to what one can imagine, the hot water impregnates only partially the ground coffee and tends to be privileged passages between the openings of the bottom and the openings of the collector. Depending on the speed of the passage of the water, called the wetting time, only a fraction of the coffee powder contained in the capsule is wet and can release its aromas. The non-wet coffee part does not allow the extraction of the aromas and is lost.
To improve this fact, it is necessary to implement an effective means to ensure total impregnation of the ground coffee contained in the capsule by the hot water, so that the entire dose of ground coffee contained in the capsule contributes to the production of a coffee extract and releases its aromas. This can be achieved by reducing or even eliminating the possibility for water flowing through the ground coffee to find preferred direct paths from the top perforations to the lower perforations. One of the solutions is to lengthen the route, without lengthening the time needed to produce a coffee. The improvement of the taste is a direct consequence of the better impregnation of the powder.
In addition, the procedure stated above, poses a problem of hygiene. Indeed, the fact that the user of the machine touches the capsule with the fingers to insert the capsule, and the fact that the water used to produce the coffee begins by rinsing the capsule before serving to extract the aromas, constitutes a health problem. The temperature of the water does not eliminate bacteria deposited on the capsule during handling which are found in the drink.
Another problem of hygiene is related to the existence of water or stagnant coffee residues in the capsule-holder which is not accessible to cleaning. The very hot capsule at the end of the extraction is evacuated automatically in a storage bin that can turn into a nest of bacterial development.
Presentation of the invention
The present invention overcomes all the drawbacks mentioned above and proposes to produce an improved flavored coffee extract from a dose of roasted ground beans and may be presented in capsules or specific pods adapted to this invention.
For this purpose, the method according to the invention, as defined in the preamble, is characterized in that one directly injects hot water under pressure into said at least partially soluble substance, in particular said dose of roasted ground coffee beans, by means of at least one injection device, this injection being carried out on the side of said sealed container hermetically sealed by said semi-rigid wall, for example said film, so as to impregnate said substance at least partially soluble, in particular said dose of ground roasted coffee beans, said beverage and in particular said coffee extract, flowing directly out of said container through said semi-rigid wall into said container, on the same side as said injection.
Advantageously, during a first step, said injection device is introduced through said semi-rigid wall, in particular said film made integral with said container and in that one injects, during a second step, directly said determined quantity of pressurized hot water inside said container, in particular of said capsule containing the at least partially soluble substance, in particular said dose of ground roasted coffee beans.
According to a first embodiment, during said first step, an injection device is used which comprises at least one fixed injector provided with means for perforating said semi-rigid wall, in particular said film made integral with said container.
According to a second embodiment, during said first step, use is made of an injection device which comprises at least one mobile injector provided with means for perforating said semi-rigid wall, in particular said film made integral with said container.
Advantageously, said injection device is arranged to produce at least one jet of hot water under turbulent pressure in said dose of ground coffee beans.
However, according to a variant, said injection device may be arranged to produce several jets of hot water under turbulent pressure in said dose of ground coffee beans, these jets having different angular orientations.
The machine according to the invention as defined in the preamble is characterized in that it comprises at least one injection device arranged for injecting a predetermined quantity of hot water under pressure into said at least partially soluble substance, in particular said dose of ground roasted coffee beans, on the side of said sealed container hermetically sealed by said semi-rigid wall, in particular said film, so as to completely impregnate said at least partially soluble substance, in particular said dose of roasted ground coffee beans, said beverage and in particular said coffee extract, being collected directly from said container through said semi-rigid wall in said container, on the same side as said injection.

Best way to realize the invention
With reference to the figures, the machine 10 comprises a set of components intended to produce a drink, from a substance at least partially soluble, especially a coffee extract from a dose of ground coffee beans. and which are impregnated by a flow of hot water under pressure to extract the coffee aromas. For this purpose the components may be classified by functional subassemblies: a first capsule support subassembly 11 with an inner surface 11a which serves as a housing for a container, in particular a capsule 20 containing a determined dose 20b of beans. ground coffee, which is associated all the elements for preparing the capsule 20 containing said dose 20b, so that it can be impregnated with water and it can release the coffee; a second subassembly 12 for conditioning the water to prepare a predetermined quantity of hot water under pressure; a third subassembly 13 for transferring water to bring the packaged water inside the capsule 20 to impregnate said dose 20b of ground coffee beans; a fourth subassembly 14 for collecting the coffee extract obtained, associated with evacuation means to a consumer container, for example a cup (not shown).
Figs. 1 to 3 show a first embodiment of the machine, which is, as shown in FIG. 1, initially in a rest position, that is to say in a phase where no capsule is put in place to prepare a coffee. Fig. 2 represents the machine 10 of FIG. 1 in a first phase during which a capsule 20 is in place in the first subassembly 11 which comprises an inner housing 11a serving as a support for the capsule 20, this housing having strictly the shape of the body 20a of the capsule 20. The body 20a in which is the dose 20b of ground coffee beans is provided with a flange 20c to which is fixed by thermal welding or the like, a cover 20d, in the form of a semi-rigid film, preferably made of a composite material composed of a synthetic material compatible with a foodstuff and an aluminum coating to guarantee airtightness. A ring-shaped seal 20e is interposed between the rim 20c of the capsule 20 and the surface 11a of the support serving as support. The body of the capsule 20 may have a specific profile, for example it may include grooves or grooves whose function is to impose a positioning or a single orientation of the capsule 20 in the housing of the support 11a. Various forms of capsules are shown by way of example in FIGS. 8, 9 and 10. When the capsule 20 is in place, the machine 10 is ready for the rest of the process of preparing a coffee. Both figs. 1 and 2 show the capsule holder 11a in the open position, respectively without and with a capsule 20. The capsule holder 11a is vertically movable between an open position carrying a capsule 20 and a closed position.
Said second subassembly 12 for conditioning the water to prepare a predetermined quantity of pressurized hot water comprises, in a known manner, metering means for preparing the required volume of water and a heating device of this volume. water, to bring it to the desired temperature, which is the boiling temperature so that this volume of water is pressurized by the steam produced. This subset communicates with said third subassembly 13, said subassembly for transferring water to bring the conditioned water inside the capsule 20.
Said third subassembly 13 comprises an injector 13a which has the shape of a rigid needle and which opens into the capsule 20. In the example provided, this injector is unique, vertically disposed and off-center relative to 20d of the cap 20. It is prominent and beveled so that it automatically enters the container, after perforating the lid 20d or closing film of the capsule 20. The hot water under pressure is projected in the dose of ground coffee that it completely impregnates to form a coffee extract containing a maximum of aromas.
According to the first embodiment, the injector 13a is fixed and protruding so that the introduction of its spike tip 13b inside the capsule takes place automatically when the support 11a, carrying the capsule. 20 descends towards the fourth subassembly 14, namely the collection subassembly of the coffee extract. The beveled tip 13b pierces the lid 20d, and releases hot water under pressure to impregnate the ground coffee beans. Note that in this variant, the injector 11a is fixed and that the perforation of the lid of the capsule is solely due to the displacement of the support 11a.
FIG. 3 illustrates the machine after the closing of the capsule-holder 11 and after the penetration of the injector 13a into the body 20a of the capsule 20, by its pointed tip 13b. The injector 13a is off-center with respect to the capsule 20, which has the effect of forcing the passage of the hot water under pressure upwards, namely the bottom of the body of the capsule, against which the jet of water A is projected and reflected against the side wall. Experience shows that the reflected jet A is dispersed in a plurality of streams A1, A2, A3, ...., An which rapidly impregnate the entire dose 20b of ground coffee beans to produce a coffee extract containing a maximum of aromas, hence the production of a coffee with exceptional taste.
Under the effect of the pressure that is induced in the capsule 20, the cover 20d is perforated at the protuberances 13f which are arranged on the inner surface of the filter or sieve 14a provided with perforations 14b and placed above the collection chamber 14c of the subassembly 14 arranged to collect the produced coffee extract and to evacuate it via a central duct 15 to a receiver, for example a coffee cup.
The second embodiment of the machine according to the invention, illustrated by Figs. 4 to 7 differs from the previous one, described with reference to FIGS. 1 to 3 in that the injector 13a is movable instead of fixed. Fig. 4 shows the machine in its rest position, before the introduction of a capsule 20. The introduction of the capsule in the support 11a, illustrated in FIG. 5 is identical to that of the previous variant. A first important difference appears at the time of closure of this support, (see Fig. 6) that is to say at the moment when the support 11a is brought into its so-called extraction position of the coffee, namely at the moment where the support 11a is lowered on the fixed block of the machine 10. Whereas in the previous example this descent automatically led to the penetration of the tip 13b of the injector 13a into the capsule 20, the capsule remains intact during the down phase of the support 11a, in the second variant. The perforation of the lid 20d of the capsule 20, by the injector 13a is an independent operation, controlled after the positioning of the capsule. In practice the mobile injector 13a moves upwards so that its tip 13b passes through the semi-rigid film which constitutes the lid 20d of the capsule 20 and sinks into the dose 20b of ground coffee beans so that the jet or jets of hot water under pressure can fully wet said dose and produce a quality coffee which will be collected in the collector subassembly 14 and flow through a conduit 15 disposed at the outlet of the collector 14.
In the foregoing description it has been a question of a single jet of hot water under pressure. It should be noted that the principle on which the present machine is based can be applied to a machine with several straight or oblique jets, in order to obtain maximum impregnation of the dose of ground coffee or coffee powder. Moreover, nothing will prohibit the use of the machine according to the invention to make all kinds of tea varieties or other drinks, for example so-called chocolate drinks.
Indeed, the machine according to the invention has a fundamental feature which is to ensure optimum wettability of the product contained in the capsule. Therefore, whatever the product, it guarantees an optimal extraction of aromas and consequently an unequaled result.
A particular advantage of the machine according to the invention is related to the possibility of producing pre-dosed cartridges of coffee grounds having a specific form and especially to adapt the holder capsule holder to the specific form of the capsules. This approach is illustrated by figs. 8, 9 and 10 respectively illustrating a cartridge 120 of round cross section, a cartridge 121 of square cross section and a cartridge 122 of hexagonal cross section. It is understood that these exemplary embodiments are not unique and may be replaced by elliptical section shapes, triangular or more complex, with striated walls, pleated or otherwise. It is essential to note that the side walls and the bottom of each type of capsule corresponds to a shape of the receiving cavity or corresponding housing 110a of the capsules 120, 111a of the capsules 121 and 112a of the capsules 122, respectively formed in the support carriers. The machine of the invention is not limited to the embodiments described, but is likely to be adjusted in the context of obvious improvements for those skilled in the art. Similarly, the invention is not limited to the applications more particularly described in detail, in particular the preparation of a coffee extract, or the packaging and the nature of the raw material used.
